Sausage Balls

Nothing says holidays or party like the appetizers that have been around forever and are still requested/eaten first. If there’s one way to make these there must be fifty!

Here’s a version without the usual biscuit mix - only because I didn’t have any and didn’t want to buy it for one recipe.

This is the moment to buy good sausage and a good block of cheddar cheese. Use the grater and freshly grate cheese for this one. It makes a big difference!! I’m a fan of white cheddar and Cabot makes a great one that is easy to find.


I believe you’ll drink what you love with these but since it is New Year’s Eve and there’s typically some sparkling wine around-try them together! Perfect pairing!!


INGREDIENTS

  • 1 1/4 cup all purpose flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon onion powder

  • 1 1/2 teaspoons baking powder

  • 8 ounces grated sharp cheddar cheese

  • 1 pound pork breakfast sausage

  • 3 Tablespoons melted butter

  • 1/4 cup milk or substitute


INSTRUCTIONS

  1. Preheat oven to 400°F.

  2. Mix the flour, salt, pepper, onion powder and baking powder together in a large bowl.

  3. Add shredded cheese and toss until coated in the dry mixture.

  4. Add the sausage, butter and milk. Mix well with hands or forks. This is a great time to use a stand mixer with the paddle attachment. Just mix until combined and don’t compress the ingredients.

  5. Use an ice cream/cookie dough scooper to portion onto a baking tray.

  6. Put a little oil on your hands and lightly roll each portion into a ball shape.

  7. Bake 20 to 25 minutes and serve while warm.
