Pecan Pie Mini Muffins

I found these on Pinterest several years ago and just remembered them in time for Thanksgiving!
They are delicious and super easy. The most important part is making sure you grease the muffin pans well. REALLY well.

INGREDIENTS
1 cup packed light brown sugar
1/2 cup all purpose flour
2 cups chopped pecans
2/3 cup butter, softened
2 eggs, beaten
1 teaspoon vanilla
1/4 teaspoon salt
INSTRUCTIONS
Preheat oven to 350°F.
Grease mini or regular muffin pans. Be sure to generously coat them or these muffins will stick!
In a medium bowl, mix together brown sugar, flour, salt and pecans.
In a separate bowl, beat butter, vanilla and eggs together.
Stir dry ingredients into the wet just until combined.
Spoon batter into muffin cups about 2/3 full. About 1 Tablespoon for mini (18).
Bake for 15 to 17 minutes for mini muffins. 20 to 25 for regular sized muffins.
Run a knife around each muffin and pop out of the muffin tin.
TIPS
Grease the tins well!
Don’t use paper liners-they will stick. Silicone pans work well!
The deeper the muffin tin - the more gooey the center.
