2020. Most of us didn’t go much of anywhere and filled our time with things we may not have done without the extra down time. My experience was much like many others and exactly like those searching for bread flour to try making sourdough bread. This recipe was something I found along the way to FINALLY producing a nice loaf of bread.
I ended up taking a sourdough class at The Bread Beckers, a local Atlanta area establishment. One of the best recipes I ended up with wasn’t a bread recipe at all, but a discard recipe. I don’t know how many times I’ve made these since then. its quick and easy.
Recipe makes 8 (2 to 3 inch) crumpets.
*I typically make them smaller and end up with more.
INGREDIENTS
1 cup active sourdough starter
1/2 tsp salt
1/2 tsp baking soda
Oil or butter for frying
1 teaspoon honey *Optional for sweet
crumpets
INSTRUCTIONS
1 Combine all ingredients in a bowl
The batter will immediately get very
bubbly when you add baking soda. 2 Fry tablespoon size portions in a
small amount of oil or butter. 3 Serve with butter, jam, etc.
*I found a seasoning mix at The Bread Beckers called Olivelle Tzatziki that I sprinkle on as the crumpets are cooking for a savory flavor.
