Bacon "Wrapped" Green Beans

This recipe comes from my friend Robyn and I dare say it has replaced green bean casserole in my house.

I love both...but this is a crowd-pleaser and we really do enjoy it for special occasions (as it is really rich).


INGREDIENTS

5 cans whole green beans, or 32-48 ounces fresh green beans, boiled to fork-tender

1 package bacon (not super thick)

½ cup butter

1 cup brown sugar


INSTRUCTIONS

  1. Preheat oven to 425 degrees Fahrenheit.

  2. Lay 1 piece of bacon flat and top with a bundle of green beans in the center.

  3. Tie the bacon around the stack of beans laying the ends of bacon across the top of the bacon above and below the knot.

  4. Place bundles into a 9x11 casserole dish.

  5. Melt butter and sugar together and spoon over each bundle.

  6. Bake covered for 45 minutes.

  7. Remove cover and bake another 15 minutes to brown bacon.


No guilt, just ENJOY!
